At The Point, every recipe we offer is crafted to be irresistibly delectable and bursting with flavours. As we embrace the health-conscious spirit of January, let’s kick off the month with our first recipe, and for those seeking plant-based delights, indulge in the enticing world of Veganuary.

Recipe of the Month

Roasted and spiced sweet potato, tossed in a cauliflower, puy lentil and mixed leaved salad, drizzled with a homemade garlic and tahini dressing.

Ingredients makes 4 portions

500 g sweet potato cubed
2 tbs olive oil
1 cauliflower florets 
Salt and pepper
1 tsp garlic purée 
1 tsp turmeric 
1 tsp ground cumin
1 tsp cumin seeds
200g cooked puy lentils
150g kale 
150g red cabbage 
50g sunflower seed
Handful of mixed leaves


Set you oven to 180c and add olive oil to a large roasting tray 
Add the sweet potato to the tray and roast for 10mins. Then add cauliflower florets and spices, salt, pepper and garlic purée and roast for a further 20 mins
Meanwhile in a large bowl add the kale, red cabbage, puy lentils and mixed leaves.
Once the veg is cooked and cooled add to the leaves and lentil mix.
In another bowl add the tahini, garlic purée, vinegar, salt, pepper, and sugar. slowly whisk the hot water until the right consistency add more if needed 
Pour the dressing over the vegetables and salad leaves and mix well.
Divided the mix on the plates and top with the sunflower seed
